🧅 ONION KOJI – The ultimate no fail veggie kōji upgrade!

If you love shio (salt) kōji, get ready to meet its advanced version: Onion Kōji!
Here's what makes it so special:

I added chopped onions, small pieces of kombu (leftovers from dashi broth), and combined it with rice kōji and salt, and let it ferment.
The result? AMAAAAZING!! ✧･ﾟ.ﾟ

Not just for marinating meat—just a spoonful of this in a stir-fried dish, or soups gives it a full umami-packed flavor punch with ZERO extra seasonings.
Seriously, it’s that good!⸜❤︎⸝

And the biggest win? I tossed some boiled spinach with this onion kōji and a dash of sesame oil. My daughter—who treats green veggies like her mortal enemy—LOVED IT! ෆ ̖́- For parents (or even spouses) struggling with veggie haters at home, this could be your game-changer!

＜So, here’s how to make it:＞
300g onion (chopped)
100g koji
30g salt
3g dried kombu (leftovers from dashi work perfectly!)

1. Combine all ingredients in a sanitized container.
2. Ferment in a yogurt maker at 60°C for 8 hours.
3. No yogurt maker? No problem! Just let it sit at room temperature for 1-2 weeks, stirring once daily.

🧅 玉ねぎ麹 – 失敗知らずの野菜麹！

塩麹の進化版「玉ねぎ麹」！
玉ねぎ、昆布（出汁をひいた後のを使用）、米麹、塩を混ぜて発酵させるだけなのに、いや、マジで最高に美味しい！！ ✧･ﾟ.ﾟ

お肉を漬け込むだけでなく、炒め物、スープ等にこの玉ねぎ麹を加えるだけで、他に調味料がなくても旨味たっぷりの味わいに仕上がるなんて、すごくない！？⸜❤︎⸝

さらに驚きだったのは、茹でたほうれん草にこの玉ねぎ麹とごま油を少し加えて和えただけなののに、野菜を敵視する娘がまさかの「美味しい！」と絶賛してくれたこと！ෆ ̖́-
野菜嫌いなお子さんや旦那さんがいらっしゃる方、、、朗報かも！！

作り方はこちら：
玉ねぎ300g（みじん切り）
麹100g
塩30g
乾燥昆布3g（細かく切る）（だしを取った後のものでもOK）
1. 全ての材料を消毒済みの容器に入れて混ぜる
2. ヨーグルトメーカーがある場合は60°Cで8時間発酵させる
3. ヨーグルトメーカーがない場合は、一日1回かき混ぜながら室温で1～2週間発酵させる

🎍 For those of you in Japan, you may have spotted these decorations at supermarkets or shopping malls.

If you’ve ever wondered what they are, they’re Japanese New Year decorations. (And those who joined my December class, you know exactly what they are!)

These are called SHIME KAZARI—a type of decoration that originates from the SHIME NAWA, a large straw rope with zigzag-shaped paper strips often seen above gates at temples and shrines.

SHIME NAWA are used to mark sacred spaces where gods reside, acting as a boundary to separate the purified area from disasters and impurities.

SHIME KAZARI are smaller, more decorative versions of SHIME NAWA, often adorned with good luck charms. You’ll see them hung on doorways and entrances of homes. The design and details vary slightly by region, adding a unique local touch.

They’re typically put up on December 27th or 28th and taken down after January 7th. Unlike HINA dolls (Doll Festival in March) or Christmas trees, SHIME KAZARI are never reused.　New Year’s decorations are meant to invite the God of the New Year, so reusing them is considered disrespectful to the God, and so, they are meant to be new each year!

If you’re spending New Year in Japan, why not try putting one up? There are no strict rules—just pick one that fits your taste and budget!

🎍街はすっかりクリスマス一色ですが、一部ではお正月の準備もちらほら。スーパーやショッピングモールでも正月飾りが沢山見られるようになりましたね。

今日はそのお正月飾りの一種、「注連飾り」について。（意外と知らないかも！）
「注連飾り」とは、寺や神社で良く見られる注連縄に由来するお正月飾りの一種です。

注連縄は、神が宿る場所であることを示し、周囲の災いや汚れから清浄な場所を隔離する境界線として用いられます。
注連飾りは、その注連縄のより小さく装飾を施したもので、家を守る為、家の出入り口や玄関に掛けます。形や装飾品は地域によってわずかに異なるようです。

通常、12 月 27 日または 28 日に飾られ、1 月 7 日（松の内）以降に取り外されます。雛人形やクリスマスツリーとは異なり、注連飾りは使い回しはしません。正月飾りは歳神様をお招きするためのお飾りであるため、使い回すことは歳神様に失礼にあたるから。
だから毎年新しいものにするのです!　（やばい！使いまわした事あるかも！神様ごめんなさい！）

〖TŌJI 冬至 / WINTER SOLSTICE〗
Today, December 22 marks TŌJI, the winter solstice, and the shortest day of the year!
In Japan, TŌJI traditions reflect a deep connection to the changing seasons, promoting health, warding off bad luck, and preparing for winter.

❖Seasonal Customs of TŌJI

᛭ITOKO NI (いとこ煮): A warm dish made with pumpkin and azuki beans. Pumpkin boosts immunity, while red azuki beans ward off evil spirits. ITOKO NI symbolizes health and protection for the year ahead.
(Skipping it this year—my family has had enough after my November’s lessons! 😅)

᛭YUZU Bath (YUZU YU 柚子湯): Soaking in a hot bath with fragrant YUZU citrus fruits is said to prevent colds, improve circulation, and refresh both body and spirit. Its citrus aroma fills the room, creating the perfect relaxation.
Want to try? Just float 1 or more YUZU citrus (as a whole) in a hot bath, soak yourself and relax!

TŌJI is more than seasonal customs—it’s a chance to renew yourself and prepare physically and mentally for deeper winter.

12月22日の今日は冬至、一年で最も夜が長い日。日本では、この日を通して健康を願い、邪気を払い、冬を迎える準備をします。

❖冬至の習慣

᛭いとこ煮: かぼちゃと小豆の体に優しい煮物。かぼちゃは免疫力を高め、小豆の赤色には邪気払いの意味があります。
（11月のレッスンで作り過ぎたので、今年はパス😅）

᛭柚子湯: 柚子を浮かべた温かいお風呂は、風邪予防や血行促進、美肌効果、体を温める効果があり、心もリフレッシュできます。

冬至は、ただの節目ではなく、心身を整えて新しい季節に備える大切な日です。

❀ Pepper Kōji! ❀ (日本語は下に⇩)

So, the inspiration comes from a cozy night out with a friend, where this was served alongside tender duck meat. I fell in love with its flavor and couldn’t resist asking what it was. Turns out, it was SOY SAUCE -MARINATED PEPPERCORNS! Because fresh peppercorns are rather costly and hard to find, they gave it a twist by boiling regular peppercorn and marinating it in soy sauce—wow!

And of course, I had to give it a try… but with my own little twist! I turned it into a KOJI SEASONING for that extra umami punch. Here's how you can make it:

1>Boil whole peppercorns until soft.

2>Drain and mix with kōji (as much as you like) (used brown rice koji this time)

3>Drizzle soy sauce until everything is soaked.

4>Set aside until the kōji softens and ferments.

5>Enjoy as a condiment for meat, fish, or anything your heart desires!

Tip: The soy sauce from this turns out just as incredible as the marinated peppercorns themselves.

❀ ペッパー麹！❀

きっかけは、お友達と夜飲みに行ったお店で出された一品。鴨肉に添えられたこの調味料がとても美味しくて、思わず「これ、何!？」と質問！答えは…コショウの醤油漬け！市販の生胡椒は高価で手に入りにくいので、普通の胡椒を茹でて醤油に漬けたんだとか。

もちろん、私も真似して作りたくなり、でもやっぱりひと工夫したい！なので今回は麹調味料として仕上げてみました。
作り方はこちら：

１＞粒胡椒を柔らかくなるまで茹でる

２＞水を切り、麹（お好みの量）を混ぜる（今回は玄米麹使用）

３＞全体が醤油に浸るように醤油を注ぐ

４＞麹が柔らかくなり、発酵するまで置いておく

５＞肉や魚の付け合わせや、自由なアレンジでどうぞ！

ポイント：この醤油自体も、漬けた胡椒と同じくらい最高！
